Corn Salsa and Cucumber Appetizer

Fresh corn and cucumbers are abundant and inexpensive at the moment, so what better time to use them in a fresh tasting appetizer that looks and tastes great?

This is an easy appetizer to prepare.  You can even prepare the salsa and cukes ahead of time and assemble just before serving.

Ingredients:
2 cups cooked corn kernals (you can use freshly steamed or roasted/frozen defrosted would work well too)
1/2 cup diced sweet red pepper
1/2 cup diced red onion
1-2 TBSP finely diced jalapeno pepper (to taste)
1/2 tsp chipotle chili powder (or to taste)
juice of one lime
1/4 cup fresh cilantro, finely chopped
1 English cucumber
salt and pepper if you like (I don't add salt)

Mix all ingredients except the cucumber in a bowl and set aside to marinate for about 1/2 an hour. 



Cut the (well washed) cucumber into 1/2 inch rounds.  With a melon baller or the tip of a vegetable peeler, create a pocket in the cucumber slices.



Top each cucumber round with a TBSP or so of the salsa just before serving.  Add a cilantro leaf for garnish if you like.  That's it! 



Easy, fresh, tasty.  I love summer!
