Fresh Tomato Soup

The roma tomato crop in my garden has slowed, which is a sad turn of events.



So, I thought I'd console myself with a fresh tomato soup. First, I milled fresh chopped tomatoes (the machine purees the tomatoes and discards the skin and seeds):



I water sauteed some onions, garlic, fresh herbs and celery, then added veggie broth, 1.5 tsp maple syrup (for approx. 8 servings), and the fresh tomato puree. I simmered the soup for about an hour, cooled it slightly then pureed it in the Vitamix and returned it to the rinsed soup pot.



Garnished with some fresh snipped chives. A little bit of heaven.
