Lunch Bento Box

Packing a lunch doesn't have to be drudgery.  If you've resolved to take a healthy lunch to work or are trying to pack healthy lunches for your kids (as well as reduce waste and expense), then you might want to consider getting some Bento-ware.  I just love my bento lunch box from Laptop Lunches.  Ingenious, fun, good for the environment, not to mention your pocket book.

Want a freshly tossed salad?  Take Romaine lettuce hearts on Monday and stash them in the fridge, then just take fresh toppings every day for lunch:



In the one above, I put chopped tomatoes on top of baked tofu cubes, red onion slivers, French breakfast radishes, chopped green peppers, ground flax seed (I like to sprinkle it on my salad), with a homemade creamy vegan chipotle dressing.
