Blueberry Parfait

Sometimes simplicity rules.  I love blueberries and we all know by now that they are a nutritional powerhouse.  Consider the simple parfait:



Fresh or frozen blueberries, heated on the stove or in the microwave with a little water.  Add a sweetener if you like.  Let cool until they naturally "gel" a bit.

Layer with unsweetened soy yogurt.

Great for breakfast or an easy fast dessert.
