Blueberry-Oat Bars

When I'm looking for a recipe that is low fat, vegan and healthy, I often turn to one of my favorite blogs, Fat Free Vegan, by SusanV.  This is a great blog with a wealth of recipes and a good search feature.

Having seen a post a while ago about Blueberry-Oat bars, I'd made a note to give the recipe a try.

First I cooked the blueberries briefly and thickened them with a slurry.  (I'd run out of corn starch, so thickened them with a bit of flour.  They would have been better with the corn starch.)



The batter is easy.  Again, I didn't have enough applesauce, so sort of improvised.  The recipe would have been better without my extemporizing.  My batter was too dry in retrospect.  I spread half the batter in an 8 x 8 ceramic dish:



Then I added the blueberry mixture and topped with the remaining batter and baked.  Even with my recipe substitutions, these were quite good.



Next time I'll make them the right way.
