Cauliflower Spinach Mashed 'Potatoes'
We all love comfort food, especially when the weather turns cooler. I particularly like this recipe using cauliflower and spinach, whipped to create a creamy comfort food extraordinaire.
This is another easy-to-make dish with few ingredients that doesn't require a lot of prep. The cauliflower replaces potoatoes for a smooth creamy finish.

Ingredients:
1 large cauliflower, broken into florets
4-6 fresh garlic cloves, peeled but left whole (to taste)
6-10 oz fresh baby spinach
1/4 cup cashew butter (I use raw cashew butter)
2 TBSP salt free herb blend (e.g. Mrs. Dash or dried dill, or fresh herbs like dill or snipped chives)
dash of freshly ground nutmeg
salt and white pepper to taste
Soy milk (or another non-dairy milk of your choice) if necessary to thin
Steam the cauliflower and garlic cloves. Steam the spinach, drain, then squeeze out excess water. Chop the spinach coarsely. Puree the cauliflower and spinach in a food processor with the cashew butter, adding soy milk as necessary. Transfer to a bowl and stir in the spinach, herbs, nutmeg, and salt and pepper.

In the one above I added some freshly snipped chives just before serving. Comfort in a bowl.

I'm just starting out as a Nutritarian and got a ref for your blog from Dr. Furhman. I will try this recipe this week, have used potatoes and cauliflower before but not w/ spinach. I wanted to thank you for sharing all these amazing recipes with the world, very sweet!

I love this recipe. You can play around with the amounts and it still comes out quite well. Using baby spinach is great in this recipe. Thanks for your comments. Cooking is my vocation.
